Serves 12 - Preferably use pavlova same day as baking.

5 medium egg whites
1 tspn. cream of tartar
2 tbsp. skim miik powder
2 tspns. sweetener - heat resistant, like splenda.
1. Whisk egg whites lightly with electric Mixer on the lowest speed.
2. Sprinkle in cream of tartar and continue to beat on next speed
until mixture forms peaks.
3. Add skim milk powder and sweetener, a teaspoon at a time, until
mixture is stiff.
4. Spread onto a lightly greased pavlova tray, making sure the outer edge is slightly higher than the centre, to allow it to be filled after cooling.
5. Cook in a slow oven for 30 minutes, or until the meringue has a slight crispness to it.
6. Turn off oven and leave pavlova in oven until it cools and dries out.
Suggested Toppings:
a) Strawberries, banana, passionfruit.
b) Kiwi fruit.
c) Peaches, strawberries.
d) Low fat, low cholesterol, low calorie custard.
e) Low calorie diet topping
